What’s the deal with Me and this Deli?
My name is Sam Thierstein, and I am obsessed with a big sandwich. The type of variety from those big, beautiful, New-York Deli's and Bodega’s that I only seem to see on the internet. Bursting with juices, house made sauces, and big stacks of meat and cheese in every bite… I’m obsessed, and I can’t seem to find a place anywhere near me that has what I’m looking for….so I’ve set out to bring it to Skagit myself. I've spend the majority of the past 2 decades honing my crafts, learning everything I can about the restaurant business, the kitchen, brewing, flavor layering and recipe building, everything. Yeah, the menu is big. But honestly? You were going to modify it anyway, and now I’ve given you countless options to choose from, and come back for, without ever getting bored. My recipes. My style. My flavor. My way… But you can still do whatever you want to them, I really don't mind.
Smoke is for the meats, and Temple is for the gathering of my people.
There’s a lot of things that I am obssessed with. Honing my craft, smoked meats, brining, cooking in general, building things, brewing, recipe building, flavor crafting, my family, solving problems, and staying busy. Happiness. Laughing.
I’m also a punk metalhead. I love it. High energy and blast beats echoing inside my chest, loud screams and insane vocals, these are the things that get me going in the morning. I aim to combine this high-energy intensity, and the alternative punk aesthetic, with the food that I prepare and serve to you, in terms of my process, serving sizes, flavor combinations and more.
Everything that I can, I make from scratch with layers upon layers of flavor. Anti-compromise on quality, and execution.

Where are the Brew’s?
A microbrewery production facility is currently in the works, and when ready, will produce canned beers of my own recipes, with art designs worth collecting, scattered across Mount Vernon’s local beverage resellers, as well as open pours and a Taproom in house.
+Expect crisp, refreshing Lagers, classic Ales, and bold, flavorful IPAs, pushing the territory on hops and local grains and what a beer can look and taste like. Various brews will be cycled through, but expect a heavy focus on execution heavy beers, and high gravity, hoppy flavor bombs.
